Ingredients:
3 oz (85 g) cod fillet
1 cup (100 g) Brussels sprouts, halved
1/2 cup (100 g) cauliflower florets
1 tsp olive oil
1 tbsp butter
Instructions:
Preheat the oven to 375°F (190°C). Line a baking sheet with foil.
Place the cod fillet on the sheet, season with salt, pepper, and a drizzle of olive oil. Bake for 15 minutes.
Toss Brussels sprouts with olive oil, salt, and pepper. Roast on a separate sheet for 20 minutes, flipping halfway through.
Steam cauliflower florets for 10 minutes. Mash with butter and season with salt.
Serve the cod with Brussels sprouts and mashed cauliflower.
